These security vans don't always appear when you first drive passed the locations, you just have to be patient and drive by when you can.
LA PUERTA SECURITY VAN
This Security Truck is located at the Globe Oil Gas Station in La Puerta. Two security guards will be putting the daily deposit into the truck, hence your chance to steal it.
Stop near the truck and get out and start shooting the security guards. They aren't in the truck yet so you can get easy shots on them. You'll be pegged with a 2-star Wanted level once this happens. Or if you've got a bazooka, just blow the van up once the money is in the back. The money will fall out onto the ground
With both guards down, take the money case (around $4000) and escape! Find the nearest place to hide and escape the Police to complete the theft.
CYPRESS FLATS SECURITY VAN
This Random Event is located in the Cypress Flats area just north of Ammu-Nation. A security truck will be on the road, so block its way and steal its goods. Or you can drive behind it and attach a sticky bomb to the backdoors and from a safe distance detonate it. Or once again from a safe distance Bazooka that truck. Then get out and kill both guards and grab the money and drive off and hide until the heat dies down.
LITTLE SEOUL 1 SECURITY VAN
The Security Truck is located at an Asian strip mall in Little Seoul. The guards are just about to leave the area and you need to take the deposit!
You can either blow the van up or wait until it drives off and attach a sticky bomb to the rear doors and blow them open. If you opt to blow the doors open, the guards will get out to shoot at you, so quickly take them both down! And grab the money (around $4000) and then get outta the area. Evade the Police to make a successful score!
